| Chickpea (Garbanzo Bean) Noodle Soup |

1 tsp. minced garlic ½ cup chopped onion 3 cups water 2 cups dry whole grain pasta 1 ½ cups cooked, drained chickpeas* (1 can) 1 ½ Tbsp. chicken-style seasoning 1 tsp. dried parsley or 2 Tbsp. finely chopped fresh parsley In a large pot, lightly steam onion and garlic. Place next 3 ingredients into pot and bring to a boil. Cook on medium heat until pasta is tender. Add chickpeas* and parsley. *also called garbanzo beans |
