| Jamoca Almond Fudge Ice Cream |

Mix together:
3 cups soy milk
2 cups cashews
¼ cup maple syrup
1/8 tsp salt
1 Tbsp vanilla
5 Tbsp Roma Coffee (sometimes I use a little less)
1 ½ cups carob chips (malt sweetened)
Blend and freeze.
For freezing, I put mine in the ice cream maker and then freeze – it seems to improve the consistency.
This will make approx. 2 quarts, so most of the time I cut the recipe in half.
